Chocolate sponge cupcake

After baking the Brownie, my mum told me might not be enough for my cousins. So I bake another batch of simple chocolate cupcakes. The look is not so fantastic, but the cup cake is so soft and fluffy!

I use the receipe of sponge cake, but added 20g of Hersley cocoa powder. Haha... was tire after preparing dinner and the brownie!

Mixed Fruit Muffins

These muffins are specially baked for Joanne's mum. I used the Apito muffin mix which I bought from KC, except that I added mixed fruits. and replaced part of water with orange juice.


This is the what I follow from the instruction.

500g Apito Muffin Mix
4 eggs
110ml water (I use orange juice 80ml orange juice +30ml water)
140ml cooking oil (I use sunflower oil)

1. Mix eggs, water & muffin mix together till well combined. (I soak mixed fruits into the orange juice mixture before this step)

2. Then add cooking oil.

3. Pour into Muffin cups and baked in preheated oven at 180degress celcius for 15-20mins.

Banana Chocolate Chips Muffins


Ingredients:
5 small ripen banana
1/2 cup water
1 egg
60g oil
170g Self Raising flour
120g castor sugar
100g chocolate chips

Method:
1. Mix the egg, milk, melted butter and mashed banana in a bowl.
2. Add the flour, sugar and chocolate chips and stir gently. Do not overmix.
3. The batter should be lumpy.
4. Fill the muffin cups with batter till 2/3 full.
5. Bake in a preheated oven at 180 deg C for 20 minutes or until the muffins are in golden brown.

Peanut Butter Muffins

These muffins are requested by my good friend, Audrey. She wants to have it for her high tea in office tomorrow.



Recipe yields 12 muffins

Ingredients:
4 big tbsp Peanut butter jam
1 egg 100g castor sugar
200 g self raising flour
250 ml water

Method:
1. In a bowl add egg and lightly beat.
2. Add sugar and water to stir.
3. Add peanut butter to stir and mix.
4. Fold in flour.
5. Pour into paper cups lined in a muffin tray.
6. Baked in preheated oven 190C for 15 mins.

Chocolate rice Yogurt Muffins


I made this Chocolate Rice Yogurt Muffins this evening, intention is to have them for tomorrow breakfast. But my princess has eaten one for dessert after her dinner!
I got the recipe from Happy Flour.

Recipe

Ingredients
40g butter
75g sugar
1/4tsp salt
1 egg
1/2tsp vanilla essence
110g cake flour
1/2tsp baking powder
1/4tsp baking soda
110g plain yogurt
40g chocolate rice

Steps:
1. Preheat oven to 175C.
2. Line muffin tin with paper casing and set aside.
2. Sift flour, baking soda and baking powder together, set aside.
3. Cream butter, salt and sugar until light and fluffy.
4. Slowly beat in egg and vanilla essence until well combined.(If batter curdle add in some flour.)
5. Fold in flour and yogurt alternately until well combined.
6. Lastly fold in chocolate rice.
7. Spoon batter into the muffin tin until 70% full.
8. Bake in the preheated oven for 25-30mins.
9. Remove cupcakes from tin and cool on a wire rack.

Muffins for mY Birthday


Today is my birthday! After lunch & afternoon hi-tea treats from friends, I reached home around evening. My little princess took out the muffin cups from my kitchen cabinet. I know she is asking me to bake muffins again. She really loves my bakes! So not to disappoint her, I spent an hour in total to prepare & bake her favorite Oreo muffins.
Yummy ! We going to have these as dessert after our dinner.

Spongy Cake & Healthy Banana Muffins

I bake these spongy cake and banana muffins for praying my grandpa's death anniversary tomorrow. As my aunties don't eat butter, I have to bake them without using any butter or milk.

This spongy cake is an easy receipe, using simple ingredient. I adapt the recipe from Bits of Taste, the recipe uses mixed fruits but I have replaced it with dried cranberries & reduced the sugar to 100g.



As for these healthy banana muffins, I got the recipe from Gina's shop. I have added walnuts in it.

Double Chocolate Chips Muffins

Lately I have been repeatedly baking Blueberry Muffins and Blueberry & Apple Muffins. Thought of having chocolate muffins for a change. So bake these Double Chocolate Chips muffins. I extracted this receipe from All That Matters. The muffins are not too sweet nor too dry.


Double chocolate Chips muffins (I make 12 muffins)

Ingredients
220g Self Raising Flour
250ml HL milk
140g Fine Sugar
100g Melted Butter
1 Egg (beaten)
1 Tsp Vanilla Essence
2 Tbsp Calbury's Cocoa Powder
80g Chocolate Chips

Method

1) In a mixing bowl, add butter and cream with sugar with a whisk.
2) Add beaten egg and mix well.
3) Add flour and milk, vanilla essence, cocoa powder and chocolate chips. Do not over-mix.
4) Spoon mixture into aluminium cups to about 80% full.
5) Drop some chocolate chips on top.
6) Baked at 170 deg.C for 30 mins or till skewer comes clean.

Chocolate really makes me feel good.

After dinner, I felt like baking some muffins for tomorrow breakfast. And happen to see a small packet of oreo biscuit lying in the cupboard, so bake this Oreo Muffins. I got the recipe from Happy Home Baking

Blueberry Muffins

Bake this Blueberry Muffins this morning.


Makes 8 (recipe said makes 12)
Ingredient
180g Plain Flour
60g sugar
2tsp baking powder
1/4tsp salt
2 eggs
55g butter, melted
175ml milk
1 tsp vanilla essence
1 tsp grated lemon rind (I used orange rind)
170g fresh blueberries (I used 150g)

1.Preheat oven to 190degress celcius.
2.Grease a 12-cip muffin tin (I use papercases bought from KC, so no need to grease)
3. Sift the flour & baking powder & Add sugar and salt into a bowl.
4. In another bowl, whisk the eggs until blended. Add the melted butter, milk, Vanilla essence & orange rind & stir to combine.
5. Make a well in the dry ingredient & pour in the egg mixture. Use a large spoon stir until the flour is moistened.
6. Fold in the blueberries.
7. Spoon the batter into the cups (I filled it full).
8. Bake for 20-25mins, u can see the dome top.
9. Let it cool in the pan for 5 mins before taking it out.
