Simple Face meal

My princess called it mummy's simple face dinner. These days weather is damn hot and I don't have any appetite for heavy meal, so have a very simple fried chicken eggs with seaweeds!

Buddha Jumps over the wall ~ for mum's birthday!

I have read some books on preparation of cooking Buddha Jumps over the wall and what I gather was my own receipe! Ha ha... I guess is our family always likes the original taste from the ingredients use, so this time I didn't use any of the chinese herbs to boil.

Below is the ingredients which I have prepared. Sea cucumber & shark fins were prepared few days ago.





After 2hrs and randomly checking on the softness of the sea cucumber, see the end result below. The soup is so superior and there is no salt added at all! My family members each have more than 2 bowls of it.




Other dish beside the "zhu qiao", red fermented beancurd chicken wings, sotong balls and fried korean chilli slice fish (i use korean chilli sauce to fry).



It is not a lot of food, but sis, chye, princess & mum really have a hearty meal cooked by me!
We have home bake durian cake after the meal, that ends a happy day for mum!

Chicken Rice

Mum & me feel like eating chicken rice for dinner today, so went to market around lunch to get a kampong chicken. My house nearby market is very convenient as the stalls always open till late afternoon.




Recipe

Ingredients
1 fresh chicken
Abt 2cm ginger
1 clove garlic
5 tbsp sesame oil
1 tsp salt

1. Add ginger and garlic to a large pot of water and boil.
2. Once it starts boiling, add the whole chicken into the pot.
3. Make sure the water covers the chicken, lower the heat and simmer for 25 mins.
4. Turn off heat and leave it for another 20 mins.
5. Remove the chicken and put it into a pot of cold water. Leave it for 15 mins.
Keep the above stock to use it to cook rice & soup.
6. Remove the chicken and rub salt and sesame oil all over the chicken and inside the cavity.
7. Place the chicken to cool for at least 2 hours. (normally people put in fridge but our family do not like it to be cold).
8. Cut into pieces after it cool.
9. Serve with ginger sauce.

Curry Chicken

I cooked this simple curry chicken for today dinner. It always makes me end up having 2 bowls of rice!

Ingredients :

3nos potatoes (skinned & cut into cubes)
1 whole chicken (I use Breast meat)
1 tbsp chilli powder
2 tbsp curry powder
1 tsp onion
1 tsp garlic
1/2 packet coconut milk
300ml water (put more if U want more gravy)

1. Heat oil in wok and fry potatoes till golden brown. Remove, drain and set aside.
2. Mix curry powder and chilli powder together in a bowl. Add 100ml water gradually & stir to make a thick paste.
3. Heat oil in a wok, fry garlic & onions on medium heat till fragrant. Pour the curry mixture and stir well. Then add chicken pieces and stir till chicken is cooked. Add potatoes.
4. Add the remiaining water and coconut milk and allow to boil. (I always transfer to another pot after this step)
5. Allow to simmer for 30 minutes to an hour.
6. Add salt if necessary.

Claypot Fish Head

Grandma given us a fish head last week, since my sister & brother-in-law came over for dinner, my mum requested me to cook this dish.



Ingredient :
1 medium fish head
Garlic
ginger
cabbage
carrot
mushroom
tau po
chinese wine (I used brandy)

Gravy
1 tbsp oyster sauce
1 tsp soy sauce
1 cube chicken granule
1 tsp sesame oil
1 cup of water

1. Coat the fish head with corn flour first. Then fried it with oil & put aside.
2. Prepare the gravy & set aside.
3. In claypot, heat the oil & fried garlic & ginger till fragrant. Then add carrot, cabbage & mushroom to stir fry.
4. Add in gravy & boil for 3mins.Then add in wine & tau po.
5. Lastly add in 1 tsp of corn flour & 3 tbsp water to thicken the gravy.
6. Ready to serve with rice.

Today my mum feel like just having curry fish for dinner. So not to disappoint her, we will have this curry fish for this evening dinner. it is so simple, I just fried the lady's finger & tau pot, steam the fish & leave aside, I fried the ready-make curry paste and pour the fried lady's finger, tau pot & the fish to the it & let it cooked for 5 minutes. Isn't it simple?

I didn't mix the curry gravy to my plate, as I like it plain.

Tempura & yakitori for Dinner

This afternoon I bought tempura & yakitori from Isetan food markets,so have them for dinner. I topped the plain rice with furitake to go with it. I felt so quilty after finishing them, as I have not been eating fried food for some time.
